This mom Stephanie told me about this spinach salad recipe she loves!
1/4 cup sliced almonds
10 oz baby spinach
2 nectarines, halved, pitted and each
cut into 8 wedges
3 tbsp cider vinegar
salt and pepper
1/3 cup olive oil
2 medium red onions, peeled and thinly sliced
6 oz goat cheese, crumbled
1/2 up diced smoked ham (optional)
1. Preheat oven to 350 and spread almonds on a baking sheet.
Toast in the oven until golden brown which is about 8 minutes. Put in bowl and set aside.
2. Place spinach and nectarines in a large bowl. In a small bowl stir the vinegar and sugar until the sugar dissolves. Season with pepper and pinch of salt
3. Warm olive oil in a large skillet over medium heat. Add onions and cook stirring frequently for 10-12 minutes. Stir in vinegar mixture and remove from heat.
4. Scrape hot dressing over spinach mixture and toss to coat. Sprinkle salad with goat cheese, almonds. Add ham if you wish.
You can also use grilled chicken instead of ham and switch up the fruit choice!
